Sometimes I need a quick meal. One thats nutritious and delicious and OG RAW epic-ness. This one was an inspired little creation after speaking with a friend of mine about grocery shopping (long story wont get into it here). This is best if you have a a dehydrator, however you can use your convection oven at the lowest setting possible (90 degrees). If you use the oven though you gotta watch it like a hawk so you dont bake it and kill its incredible nutrient density. Afterall, food is meant to nourish you! This ones packed with a couple superfoods to make it that much more of an Epic Creation~

3 cups golden flax seeds
2 cup coconut shreds
1 cup cacao nibs
5 bananas
6 dates
3 young coconut waters or 1 can (17.5oz) coconut water (I use C2O when I dont have the coconuts)
I like to buy the whole coconut and shred the meat myself however, this can be time consuming. VC has decent coconut shreds that arent coated in sugar. Absolute must- no sugar! Toss in blender to break down into a powder if you dont like lil coconut bits. Then stone your dates and add to blender with approximately 1 cup water. Once it starts to blend, add in bananas and blend till a cream is produced. Make sure you scrape the sides of the blender. Pour over top of flax seeds in a bowl and stir till an even consistency and blend is brought forth. Add in your cacao nibs. You can also omit the cacao if you want, Ive just got an addiction to chocolate ;) Let mixture stand for about an hour+. When you feel its ready, plop onto dehydrator sheets at 115 for 2-3 hours. You want it firm enough to score into bar sizes. Once you get a moist bar consistency, flip onto dehydrator sheet and continue the drying process for longer until desired dry texture is formed. I like mine hard like nut bars but you may prefer them a bit chewy. Its your creation afterall! Place in ziplock bag or tupperware. Will keep for a long time, especially if you freeze them....if they last that long! If you need to check yourself, put individual bars into small ziplock bags so its like grabbing one bar at a time. Of course, save the baggies! No need to kill our mother with anymore plastic in the landfills!
