Epic Creation Lasagna

Raw Lasagna brought to you by Epic Creations~ Please keep in mind Im a "lil of this, lil of that" kind of chef so measurements are eyeballed for your convenience. Im Greek so food is a big deal in my family and you learn young how to combine all of it. Over the years you start creating your own specialty dishes and they just sort of take on a life of their own. In my case, "life" is quite literal since all creations are alive! I hope you enjoy this dish. I try to make it a little bit different each time, perfecting the taste. I hope you find it as raw-inspiring as I do and eat till till your heart is content!

This recipe is for a pyrex dish measuring 9x13. Cut down or add to fill up your own size dish. Also, if you dont have a vitamix it may take a food processor to get some ingredients finer and thus, take a bit longer. If you dont own a dehydrator you can use a convection oven and keep it at the lowest setting possible. My mom uses hers at 80 degrees. and keeps a constant eye on the dish to make sure it doesnt cook. Happy creating!

Organic Raw Ingredients:
4 -6 zucchini
handful of brussel sprouts
1 bunch spinach
6 large toms
1-2 cups sundried toms
8 oz baby bella mushrooms
macadamia nuts (6-8 oz bag)
Nutritional yeast (technically not a raw product but it is phenomenal and packed with vitamins, mostly B's)
handful of dehydrated almonds
olive oil
italian seasoning apx 3 tbs, more for desired taste
lemon juice or ACV
honey
black pepper
Dill
Basil

tom sauce:
slice toms into quarters and place in blender.
Add sundried toms and water. Blend.
Continue to add water till you get a creamy base.
Keep the creamy base the whole time.
Add handful of almonds, apx 3 tbs italian seasoning, and apx 1/4 cup of olive oil
Add tbs of honey
blend till desired consistency

cheese sauce:
blend till creamy and smooth
bag of mac nuts
1/4 -1/3 cup olive oil
tbs honey
1 cup nutritional yeast
juice 1 lemon or add 1/8 cup of ACV
1.5 tbs of basil


Slice zucchini into strip or cylinders..or both and layer bottom of pyrex dish. Then smear tom sauce, then cheese. Add a layer of chopped spinach and brussel sprouts. Add tom and cheese layers. Layer again with shrooms and any left over zucchini. Zucchini should be top and bottom layer of dish. Put last layer of tom and cheese sauce smear on top of final layer. Sprinkle dried dill on top. Dehydrate till dry and top looks cracked at 115 degrees in Excalibur Dehydrator. Quit salivating and consume!! :)
